Pumpkin Spice Oreo Truffles

I bought a can of pumpkin from whole foods from a living social coupon I bought and it's been sitting in my pantry. I kept going back and forth on what I wanted to make with pumpkin. I scanned my pantry and found a bag of oreos. I haven't made oreo truffles in a while so I decided it was time. On a spontaneous whim, I decided to make them pumpkin spice oreo truffles and how cute would it be to make them actually look like pumpkins?

Ingredients:

• 1 package of Oreo, crushed
• 1/4 C pumpkin
• 1 oz cream cheese
• 1/2 tsp vanilla extract
• 1 tsp cinnamon
• 1/2 tsp nutmeg
• 1/2 tsp all spice

Tips:

- The pumpkin makes these a bit more moist than usual, slowly add the pumpkin or add more crushed oreos

- Instead of coloring white chocolate, there's convenient orange colored candy melts. To get a smoother consistency in the chocolate add a tbsp of shortening to a cup of candy melts

I brought these little suckers to work and got rave reviews. The guy that sits next to me says "aren't these sooooooo good?!?!" to each person that walks to my desk for one or sneak back for two. My senior manager says "this is the best thing I ever had in my life. You need to start selling these out of your trunk". Is that a cue for a career change? Sales to back trunk truffle hustler?
