Mmmm this is one of my favorite soups as a kid and I had to bring the recipe with me. It's currently 33 degrees in Minneapolis and all I want is to be home, drinking my mom's watercress soup. Since it was my bright idea to move here, the second best thing was to make the soup for myself.

Autumn: I need to take the rest of this Pho to go but I'm going to need to buy chopsticks and an Asian spoon.
Me: Um, why it gotta be Asian?! It's just a soup spoon.
Autumn: *laughs* No, this is definitely an Asian spoon. The only other time I've seen this is drinking miso soup at a Japanese restaurant.
Me: It's not a normal soup spoon!??!?! *thinks through all the soup I've ever eaten - pho, ramen, noodle soups*
Me: Wow. It is an Asian spoon. -_-
Ingredients:
(~4 bowls)
- 6 C Water
- 1 can chicken broth
- 1/2 lb ground pork
- 1 1/2 tsp salt
- 1 tsp sugar
- 1 bushel of watercress
Directions:
1. Bring water and chicken broth to boil in a pot
2. Wash watercress thoroughly
3. Season ground pork with 1 tsp of salt. Mix and break into small peices
4. Once water is boiling, put pork into pot.
5. Add 1/2 tsp of salt and 1 tsp of sugar
6. Reduce heat to medium
7. Cook pork thoroughly
8. Add watercress and increase heat to medium-high
9. Soup is done with it is boiling
