Thai Yellow Coconut Chicken Curry


Last weekend I moved out of my parent's house into my own apartment. I've lived alone before in Minneapolis so this isn't the first time but it's still different since it's in Houston. I've never lived alone in Houston. It actually feels quite peaceful instead of the loneliness I felt in Minneapolis.

Now with a kitchen I can call my own, I'm back in there baking and cooking. This recipe is a favorite of mine that a good friend use to make for me. It's very flavorful. You can add your choice of meat and veggies. I chose chicken breast and my favorite veggies: broccoli, onions, and potatoes.

Thai Yellow Coconut Chicken Curry

Ingredients:

  • 1/2 can of Maesri Curry paste
  • 1 can of Chaokoh coconut milk (12oz)
  • 1 can of chicken broth or water (chicken broth for more taste) (12oz)
  • 2 table spoons of oyster sauce
  • 2 table spoons of soy sauce
  • 2 table spoons of sugar
  • 2 chicken breast fillets
  • 2 stalks of broccoli
  • 1 potato
  • 1/3 white onion
  • Red pepper flakes (to taste)


Directions:

1. Bring a pot of water to boil.
2. Wash and cut broccoli while water is heating up.
3. When water starts to boil, add broccoli florets and boil for 1-2 minutes, stirring occasionally. Drain and set aside.
4. Skin potato and dice into chunks. Place into a pot of water and then bring to boil with the potatoes. Cook until desired tenderness, bring to boil and then check with a fork. Drain and set aside.
5. Slice 1/3 white onion and set aside.
6. Heat oil in a medium-sized pot over medium heat, add chicken and curry paste to soak up the flavor. Cook until chicken is fully done.
7. After chicken is fully cooked, pour in coconut milk, chicken broth (or water). Bring to boil.
8. Add oyster sauce, soy sauce and sugar.
9. Add broccoli, onions, and potatoes. Stir.
10. Simmer on low heat for 10 minutes.
11. Add red pepper flakes to desired spiciness. 2 tsp makes it just right for me.
12. Serve with rice or bread.

I grew up eating curry with bread. My friend would laugh at me and tell me how "Vietnamese" I was being when I requested bread with curry. There's a Vietnamese dish called "Banh Mi Bo Kho" which is literally Bread Beef Stew. It's a delicious Vietnamese beef stew that you dip a french baguette in. My dad makes the best Bo Kho, maybe I can get around to learning someday.
